In 2017 Raisin’ Bakery brings a fresh approach to the Perth food scene, offering a delicious French-Japanese fusion of breads and baked goods that are created onsite through a unique fruit based fermentation technique. This technique is known as “Ten’nen kōbo” in Japanese, which directly translates as “wild yeast bread”.
It is a twist to the normal sourdough starter, involving the use of various kinds of wild yeast cultivated from our choice of dried fruit, raisins. This special technique gives our wild yeast bread its unique and characteristic aroma, taste and crust – served direct to you in our vibrant Shenton Park home.
